Can I use my PhidgetSBC3 as a node in a Ethereum Blockchain

Seems to have already occurred on a raspberry.

Don't see why it wouldn't work (I'm not sure how much processing power is needed to manage a blockchain, but if RasPi is sufficient then the SBC should be too). You'll need to use the ARMv5 release of Geth. I would try running through the instructions you linked and if you come across any problems we can try to help.
