Measuring gas burner level on a coffee roaster with phidgets

I’m upgrading a coffee roaster that uses a basic gas burner as a heat source. I’d like to be able to graph changes in the amount of heat being applied using roast monitor software. I just don’t know how to electronically monitor those changes. Could anyone help me out?

How do you change the heat level of the burner? Is it a dial, or is it controlled by a DC voltage? Are there any outputs that will read out the heat level?
